Pancakes are for life, not just Pancake Day! We love pancakes in our house and I have tried a lot of recipes over the years, this is our favourite and, IMHO, the BEST pancake recipe EVER – for Pancake Day and every day!
Pancakes are for life, not just for Pancake Day and our family are huge pancake fans. We have tried a lot of recipes and this is hands down our favourite! They are very versatile and we all like different toppings from Nutella, bananas and flaked almonds with squirty cream to the humble golden syrup or lemon and sugar!
As a side note, I find the mixture is even better made in advance and kept in the fridge so it’s nice and cold when it hits the pan. You’ll need to give it a good stir through as the butter will have floated to the top.
The BEST pancake recipe EVER!
- Stand or hand mixer
- Measuring jug
- Bowl
- Frying Pan
- Spatula
- 220 g Plain Flour
- Pinch Salt
- 4 Medium Eggs
- 400 ml Semi skimmed milk
- 150 ml Cold water
- 100 g Butter

Sift 200g of plain flour and pinch of salt into a large bowl

Crack the eggs into the flour one at a time

Using an electric whisk or stand mixer mix each egg into the flour, this will make a very stiff batter

Slowly add the milk and water to the egg and flour mix and whisk well until there are no (or very few) lumps. I use a spoon to check there is no mixture left at the bottom of the bowl and whisk again for good measure!

Heat the butter in a frying pan, I don't usually measure it to be honest I just whack a hearty knob in. Once the butter has melted tip it into the batter mix and whisk again.

Using the same frying pan, make sure there isn't too much butter left, you can use a paper towel to absorb any excess. Heat the pan nice and hot but not too hot otherwise the butter will burn.

Pour some mixture into the middle of the pan, the amount you use will depend on how thick you like your pancakes! As soon as it is in the pan move the pan so the whole of the bottom is covered in the mixture.

Once the pancake is cooked through, you can check the underside is done to your liking using a spatula to lift up the sides a little. You can also usually tell as the pancake will be easy to move, if it's not done enough it is more likely to split.

Flip your pancake over to cook the other side, either using a spatula or, if you are feeling brave, you can toss it!
This side won't take as long as the first.

Once cooked serve with your favourite toppings/fillings and enjoy! I usually keep cooking until everyone has had their fill as the pan keeps a nice steady heat.
